Basic Curry
Curry sauce with broccoli, carrots and maybe chicken.

Ingredients:
1 cup
rice
1/2 tbsp
butter or margarine
1 - 2 cups
Plain yogurt
1 lb
Chicken (cut into strips/chunks)
1/2 tbsp
Olive or vegetable oil
1 lemon
Zest of a small lemon.
1/2 tbsp
Curry powder
1/4 tsp
Onion powder
1/4 tsp
Fresh ground cumin
2 - 3 stalks
Celery, chopped & diced
1 lb
Vegetable medley (broccoli, cauliflower & carrots)
Directions:
- Mix the curry powder, onion powder, cumin and lemon zest together and set aside.
- Bring 2 cups of water to a boil. Add rice and lower to low/medium heat.
- If using frozen vegetables, microwave for 1-2 minutes to thaw.
- Place a medium pan over medium-high heat.
- Add the butter/margarine, about half of the spice mix, and diced celery (if used) to the pan. Heat until butter is melted.
- Add chicken to the pan. Toss until chicken is lightly cooked and white on all sides.
- Drizzle in the vegetable oil and add the vegetable medley and remaining spice mix. Toss everything to coat and cook until vegetables are crisp and chicken is fully cooked.
- Right about now is a good time to check on your rice. Bet it's about done.
- Transfer vegetables and chicken to a bowl; slowly mix in the yogurt until the sauce reaches desired thickness.
- Serve over rice as a side or main course.
